The recipe for mini Greek yogurt Flatbread

This recipe is delightfully simple, requiring just a handful of ingredients and a mere 10 minutes of your time. The measurements I am going to list are for 12 mini flatbreads. Ready to dive in? You’ll need 250 grams of flour, 200 grams of Greek yogurt, 200 ml of water, and 1 teaspoon of salt.

Start by pouring the water into a pan, place the lid, and wait for it to come to a boil. Once it’s boiling, add the Greek yogurt, give it a good stir, and let it boil for about 4-5 minutes. Now, add the flour and salt to the mixture, and mix everything together with a spatula. When the dough is well-mixed, transfer it to a bowl and knead it with your hands.

Once you have obtained a soft and compact dough, lay it out on your work surface. Divide it into 12 pieces, each roughly the size of a walnut. Take each piece and shape it into a small ball, then flatten them until you obtain thin discs. At this point, heat a non-stick pan over medium-low heat. There’s no need to add any oil or fat, as the yogurt flatbread dough is naturally soft and won’t stick to the pan. When the pan is hot, place one flatbread at a time and cook for approximately 1-2 minutes on each side, or until they turn a lovely golden brown color.

Your yogurt flatbreads are now ready to be enjoyed and can be filled with a wide range of both savory and sweet ingredients. For a savory twist, consider filling them with ham, cheese, fresh or cooked vegetables, and your preferred sauces and condiments. If you have a sweet tooth, go for a sweet version by filling the flatbreads with jam, spreadable chocolate, or hazelnut cream. The possibilities are endless!
